Hibiscus and Pineapple Margarita with Blue Nectar Tequila

Hibiscus Pineapple Margarita

Happy Cinco de Mayo!  To celebrate, we have a margarita to share with you today that’s as delicious as it is pretty.

Debbie and I have been obsessed with shrubs lately.  So when Blue Nectar Tequila asked us to create a cocktail using their Blue Nectar Silver Tequila, we really wanted to try a margarita using a shrub for the flavoring.  This pineapple margarita uses a tropical hibiscus and pineapple shrub for a burst of flavor that has become our most favorite margarita on the blog to date and the perfect tropical margarita to celebrate the 5th of May!

The sun is going to come back today and this weekend is supposed to be beautiful.  That’s sure to get us all in the mood for some tequila and a pineapple margarita!

Hibiscus Pineapple Margarita

A shrub is mixture of fruit or herbs mixed with sugar and vinegar.  Its sweet, tangy and full of flavor!  They give cocktails a little je ne sais quoi that we think is outstanding.  This shrub is made with fresh pineapple macerated  with sugar and then combined with apple cider vinegar and a few dried hibiscus flowers.  Left to sit for a few days, the juices release from the pineapple, the vinegar flavor mellows, and the hibiscus flowers turn the shrub a pretty shade of pink with a delicate floral flavor.

You know what else is outstanding…?  It’s this tequila!  Its full of flavor but its smooth and vibrant.  This margarita has a prominent fruit flavor, but the tequila definitely shines through.  Debbie likes to drink it just with a squeeze of lime and a little water.  Have you tried tequila like that?   If you like the taste of tequila, we encourage you to try it like that and we recommend trying it with Blue Nectar Tequila.  I have to admit that I love tequila a little less than Debbie does, but I enjoyed the flavor of this Blue Nectar Tequila without a flavored mix.

Hibiscus and Pineapple Margarita with Blue Nectar Tequila

Ingredients

PINEAPPLE HIBISCUS SHRUB

MARGARITA

  • 3 - 4 oz tequila
  • 1 oz triple sec
  • 2 oz pineapple hibiscus shrub
  • 1 oz lime
  • 4 oz water
  • coarse salt for rimming the glasses
  • pineapple wedges for garnish

Instructions

MAKE THE SHRUB

  • First make the shrub. Put the pineapple, sugar and vinegar into a pot and bring to a simmer. Cover and simmer on low for 10 mins. Turn off the heat, mash the pineapple with a potato masher and then let the mixture cool. Add the hibiscus flowers. When the mixture is cool, strain it well making sure to squeeze out the pineapple. Store in an airtight jar in the fridge until you are ready to use it. The shrub can be used right away, but the flavors will meld, mellow, and get better over time.

MAKE THE COCKTAIL

  • Add the salt to a plate. Run a lime wedge around the edge of the glass and dip the glass in the salt. Add some ice to the glasses and set them aside.
  • Add all the ingredients to a cocktail shaker along with some ice. Shake well with the ice and pour into the glasses. Garnish with a wedge of pineapple.
  • Serve.

  1. I’ve never had Blue Nectar before but this cocktail recipe looks and sounds delish! Would you suggest drinking it just straight as well? Or does it need to be mixed into something?
