When we were camping on the September long weekend, a few friends we were with broke out their copper mugs and had some Moscow Mules.  Debbie was a fan and was super surprised because she hates beer!  But ginger beer doesn’t really taste like beer at all, more like a grown up and more gingery gingerale…   It got Debbie thinking of other ways we could use ginger beer in our cocktails.  This is our first go something different and we think it’s rather good!

Simple too, but kinda fancied up with the Chambord!  I just love the bottle, its so very posh.   Chambord is a liqueur made from red and black raspberries, Madagascar vanilla, and xo (extra old) Cognac that was inspired by a raspberry liqueur made for King Louise XIV in the 17th century.  It tastes fabulous with champagne in a mimosa too, just sayin…

We love the combination of flavors here with the ginger and raspberry together.  Neither one is overpowering and it just tastes quite fresh and just a little fruity.  We through a little vodka in ours cuz that’s how we roll (and we don’t like our drinks too sweet), but you could try it without or with a little more Chambord.  Same reason we added club soda as both the ginger beer and the Chambord are sweet, but if you like your drinks sweet, by all means, add more of the ginger beer instead of the soda.

Don’t forget to put a little raspberry on top when you serve these!  Don’t they look pretty?

Ingredients

  • 1 1/2 oz chambord liquor
  • 1/2 oz vodka (optional)
  • 4 oz ginger beer
  • 2 oz club soda (or more to taste)
  • fresh raspberries to top

Instructions

  • Fill a glass with ice.
  • Pour in the chambord liqueur, vodka if desired, ginger beer and soda. Give it a good stir. Top with a couple fresh raspberries and serve!
